Deep ruby red. A combination of complex aromas of bottle ageing, sweet spices and delicate toasted notes. Well-structured as well as being rounded, silky and complex with a long, delicious finish.

A complex, mature wine that is perfect for pairing with red meats, large game stews, Castilian-style roasts and all kinds of mature cheeses. Perfect with pulses, meat-based rice and mushroom dishes.

Viticulture

Grapes selected from vines of more than 60 years of age, planted at more than 900 metres altitude, favouring slow ripening and conserving acidity in the grapes, essential factors for the subsequent barrel-ageing of the wine.

Vinification

Hand harvested. Double selection table, destalked and lightly crushed. Temperature-controlled fermentation. Prolonged maceration of 25 – 30 days.

Maturation

Ageing in French and American oak barrels of 225-litre capacity for 15 months, followed by more than 20 months’ ageing in bottle.

Critic tasting note: “This wine has a nose of brambly fruits of the wood and black-olive paste. It is agreeably savory, with flavors of cassis, dark plums, black truffle, dried mountainside herbs and a touch of cedar.
