Based in Saint-Chinian, inland from Béziers in the Languedoc, and run by the Bergasse family since the 16th century. The local limestone hills combined with the decidedly Mediterranean climate, produce robust, generous, garrigue-infused wines.

This wine displays a deep, vibrant colour with subtle violet highlights. The nose is rich and expressive, revealing layers of morello cherry, violet, and a touch of liquorice. On the palate, it opens with a refreshing burst of blackcurrant, followed by a generous, fleshy texture supported by smooth, velvety tannins. Well-balanced and elegant, it finishes long and refined, with delicate hints of mocha.

Each grape variety is vinified separately using traditional methods. The fermentation process includes extended macerations of 15 to 20 days, with extraction carried out exclusively through rack-and-return and punch-down techniques to enhance complexity and structure. The wine is then aged in our cellars, with 20% matured in oak barrels and 80% in semi-buried concrete vats, striking a balance between finesse and authenticity.

Made from 30-90 year old vines with 20% of the selection aged in French oak barrels.

Perfect for meat dishes such as braised rib beef, duck with olives, lamb stew or roast pork.
