This delicious white Chateauneuf du Pape made from 70% Grenache Blanc, 10% Clairette, 10% Bourboulenc and 10% Roussanne has indulgent aromas of white flowers and green apple that release from the glass with each twist, there are flavours of buttery hazelnuts that coat the palate, also present is a precise acidity and a pleasing stone fruit tangy finish.
Once the fruit reaches full maturity it is hand harvested early in the day to keep temperatures low and minimize oxidation. De-stemming followed by a gentle pneumatic press. The juice is cold settled before being fermented over the course of two weeks. There is no malolactic fermentation to preserve the freshness of the final wine.
Maturation is carried out for 6 months in stainless steel vats.
Serve as an aperitif or enjoy with main course salads, crusty seabass and foie gras, lobster in mild spices, roast chicken with crayfish, or with desserts of apple pie or crème caramel.
