Elaboration: Harvested by hand in small picking boxes in the morning at low temperatures. Carefully selected on two sorting belts delivered via gravity to the fermenter without the use of pumps. Fermented in small concrete tanks for 10 days with manual punch downs.
Conservation: Malolactic fermentation in new and used French oak barrels then aged for fourteen months.
