Based in Saint-Chinian, inland from Béziers in the Languedoc, and run by the Bergasse family since the 16th century. The local limestone hills combined with the decidedly Mediterranean climate, produce robust, generous, garrigue-infused wines.
45 year old vines 60 % Syrah • 40 % Grenache.
Carefully selected at full maturity to capture their fullest expression, the grapes undergo complete destemming before fermentation. Traditional vinification methods are employed, with maceration lasting between 30 and 40 days to extract maximum colour, aroma, and tannin. Only gentle extraction techniques—rack-and-return and punch-down—are used to preserve finesse and build structure. Maturation follows, with 40% of the wine aged in French oak barrels, adding layered complexity and a refined touch to the finished wine.
This deeply coloured wine is inky in the glass—unfolds with an aromatic bouquet of ripe black and bramble fruits, mingled with subtle hints of wild scrubland herbs. The palate is generous and refined, offering a silky texture framed by firm, velvety tannins. Flavours build in intensity, revealing layers of liquorice and violet, while a gentle touch of cacao lingers elegantly on the finish, adding complexity and depth.
